Cannabis, the spice of life pekos pantxinet   I  agustín sagasti Dishes and recipes from Ancient Babylonia that featured a butter made with marihuana were found jotted down in Marco Polo’s papers. A marihuana based jam called Magoun is still made in Morocco. The writer Paul Boules used to serve his guests toast and dollops of Magoun at his house in Tangiers. Cannabis is used in our society to make clothes, paper and bottles in the traditional way. It’s most famous use all the same, is to be found by savouring its smoke and smell, just like big Cuban cigars. This last aspect of marihuana is only enjoyed by certain sectors of society. Especially by gourmets. That’s because some people out there have quite special taste buds and because some others are attracted by the snobbery they attach to it. We would like you all to consider grass as great-smelling tasty little herb for cooking rather than just for using to make joints and reefers. We’re gonna stick it up on the shelf there alongside the black pepper, the Cayenne peppers, the powdered cinnamon and the parsley. We chefs shall call it Mari.
We’ve come up with two recipes: a starter and a dessert:

salad
Take a bunch of roquette leaves, another one of mustard leaves, the curly heart of an endive and a few leaves of marihuana. Dress them all with salt, vinegar and marihuana oil. Serve with duck wings (you can buy preserved ones in cans) fried with a little sugar.

fruit carpaccio
Half a kilo of red plums, half a kilo of yellow plums, a ripe mango, quarter a kilo of strawberries and two pears. Peel all the fruit and take the stones out. Place everything in a square tray and add the juice of four oranges, one lemon, 100 grams of sugar and half a glass of tea made from marihuana. Put it in the freezer. When it’s frozen in brick form remove it from the tray and slice it as thinly as you can. It’s much nicer to eat when it’s frozen.

Recipes that use butter made with the heart of marihuana plants have a psycho-tropico effect. Be careful with the quantities you use. If the dish only contains the leaves, no worries. If you eat too much, you might just get.
